ingredients:

  • 3 large tomatoes
  • 2 cucumbers
  • 1 red onion
  • 1/2 lettuce leaf
  • 1 red pepper
  • 2 slices white cheese (cut into cubes)
  • 10 black olives
  • 1 pinch of thyme
  • Juice of 1 lemon
  • 4 tablespoons of olive oil

  • For the top:
  • 1 pinch of thyme
  • 1 tablespoon of olive oil

Method of preparation:

Cut the tomato, cucumber and peppers into large pieces, and the red onion into half moons.
Mix olive oil, lemon juice, salt and thyme in a separate bowl and spread over the vegetables. Chop the lettuce into the size that will fit a fork and add to the salad together with black olives and mix again.
You can put the salad on a serving plate, place slices of cheese on it, sprinkle with thyme and olive oil and serve.
