Desserts flavored with sour fruit are the best choice for those who don't like too much sweetness. One of the first things that comes to mind when you think of sour dessert is lemon cheesecake.

    For the bottom layer:
  • 300 grams of oatmeal cookies
  • 110 grams of butter
  • 40 grams of powdered sugar

  • For the middle layer:
  • 25 grams of flour
  • 4 eggs
  • 700 grams of labne cheese
  • 200 grams of sour cream

Method of preparation:

For the bottom layer, crush the cookies with a food processor. Add melted butter and powdered sugar and mix well. Oil paper cool in a circular mold with a diameter of 24 cm. Wrap the outside of the mold with foil. Pour the mixture into the mold and spread it by pressing it. Bake for 10 minutes in an oven preheated to 160 degrees and remove from the oven. Then lower the oven temperature to 150 degrees.

Beat the labne cheese, flour and powdered sugar in a mixer or with a whisk on low speed. But don't overdo it. Mix the lemon juice, cream and lemon zest and add to the cheese mixture and mix well with a wooden spoon (or spatula). Add the eggs one at a time to the mixture and mix. After mixing everything well, pour the prepared mass into the mold. Place the mold in an oven tray and fill the tray with water to a height of 3 fingers. Place the pan in the oven and bake for 70 minutes. After cooking, close the oven and wait 15 minutes without opening the lid. After 15 minutes, half-open the lid and let it rest for 20 minutes. Take the mold out of the oven, wait until it reaches room temperature and place it in the refrigerator.

For the lemon sauce, mix the starch, lemon juice, lemon zest and powdered sugar in a bowl. Cook over medium heat, stirring, until thickened. Add butter to the thickened sauce, melt and cool. Spread the sauce over the cheesecake and wait for it to cool. Then you can slice and serve.
