ingredients:

  • 2 cups of sushi rice
  • 2.5 cups of water
  • 1 cup of rice vinegar
  • ½ cup white powdered sugar
  • ¼ cup of salt
  • 8-10 leaves of sushi seaweed

  • For the filling:
  • 1 ripe American pear (avocado)
  • 4-5 sprigs of green onion
  • 2 tablespoons of labneh cheese
  • 2 pieces of smoked salmon
  • 1 thin slice of salmon fillet
  • 2 pieces of crab surimi

  • For the top:
  • 1 thin slice of salmon fillet
  • 8-10 shrimps
  • 1 thin slice of smoked eel
  • 1 tablespoon of sesame seeds

  • To serve:
  • Soy sauce
  • Wasabi

Method of preparation:

First, wash the rice 4-5 times and remove the starch. Next, cook the rice in a pot with 2.5 cups of water over high heat until it boils. After boiling, close the lid, lower the heat and cook for another 10 minutes. After 10 minutes, remove the pot from the heat and set it aside. In a separate coffee pot, mix rice vinegar, sugar and salt. Bring to a boil on low heat until smooth. Then add the prepared vinegar mixture little by little on the cooled rice and mix with a wooden spoon without crushing the rice. Set the mixture aside to cool.

For the filling, pit and peel the avocado. Cut into 5-6 mm long strips. Cut the salmon fillet into thin long ribbons with a diameter of 7-8 mm. Cut the crab surimi in half lengthwise as well. Cool the sushi seaweed so that the shiny part is on the bottom. Place the American pear, salmon and labne cheese lengthwise in the middle. Firmly press the sushi through a bamboo plate. Set aside the portion that you rolled out in the shape of a black stick. Take a handful of rice with wet hands on the plate and spread it evenly. Place the prepared seaweed roll in the middle of the rice and press the sushi firmly. Then cool the smoked salmon on the plate and put the prepared roll on it, pressing it evenly with the plate. Place your sushi on a cutting board and carefully slice it with a sharp knife in a parallel back and forth motion. Clean the knife by wiping it with a wet towel after each slice. Sushi may fall apart if you slice it with a dry or grainy knife.

For another type of sushi, lightly moisten your hand with water and take some of the sushi rice and roll it in your hand. Place 1 slice of finely chopped salmon in your hand and spread the pilaf ball you poured in the middle of the salmon piece. Then turn the prepared sushi upside down and press it 1-2 times from the sides to strengthen its shape.

After making the fish sushi, cut the lengthwise sushi board right in the middle and sprinkle sesame seeds on it. You can serve the prepared sushi with soy sauce and wasabi.
