In these cookies, which you can prepare for a snack or breakfast, add flour from ripe bananas and coconut, powdered sugar and dry figs and raisins replace it. With coconut and walnuts, no extra oil is needed.

ingredients:

  • 1 ripe banana
  • 4 dried figs
  • 2 tablespoons of raisins
  • 1/2 cup coconut
  • 1/2 cup walnut kernels
  • 1 teaspoon of cinnamon
  • 1 teaspoon of baking powder

Method of preparation:

Soak figs in boiling water for 5 minutes.
Chop the banana and softened figs and put them through a food processor. (Be sure to use a fully ripe banana. Ripe bananas are more sugary, so they will adjust the sugar balance in the dough. If you want a sweeter cookie, you can add a little honey.)
Mix all the ingredients and get a hard dough. Divide this dough into 12 equal parts and roll them into shape with your hands.
