- 250 grams of flour
- 200 grams of sugar syrup
- 1 pinch (2 g) of salt
- Grate 1/2 lemon
- 150 grams of softened butter at room temperature
- 5 egg yolks
- 200 grams of powdered sugar

Method of preparation:
To prepare the dough, mix flour and sugar in a bowl, add lemon and 1 pinch of salt and mix.
Cream the softened butter at room temperature by hand. Add the flour mixture and mix well. Add the egg yolk and knead the dough. Wrap the dough in stretch cellophane and place in the refrigerator for 1 hour.
Tear off small logs from the dough and spread them lightly by hand according to the size of the tart mold. After spreading it inside the mold so that the edges are not loose, dip it with a fork from all sides. Bake in a preheated oven at 180 degrees for 18-20 minutes until the tartlets are light fried. Take the tartlets out of the oven and set them aside to cool.
To prepare the caramel cream, melt the powdered sugar in a bowl until caramelized. Add the warmed cream on top and mix on low heat. Add the melted white chocolate and butter and mix well. After boiling, remove from heat and cool.
Fill the tartlets with the melted caramel cream and place in the refrigerator for 1 hour. When serving, sprinkle with chopped walnuts.
