Not to mention the vitamin content. In today's recipe, we will use carrots with an unusual cooking method. Forget about sauces like cream and oil that you use in pasta. Today we will make a sauce by combining the root with several ingredients.
When our pasta and sauce come together, you'll want to make this recipe that will make you forget all the pasta you know, both super healthy and insanely delicious.

ingredients:

  • 1 package of spaghetti pasta
  • 2 liters of water
  • 1 teaspoon of salt

  • For the carrot sauce:
  • 5 medium-sized carrots
  • 2 cloves of garlic
  • 4 tablespoons extra virgin olive oil
  • 1 glass of water
  • 2 teaspoons of salt
  • 1/2 cup black pepper

  • For the top:
  • 4 servings of cottage chees

Depending on the size of your root, the amount of salt that should be added may vary.
After running your sauce through the robot, you can taste it and adjust the amount of salt according to your taste.
This recipe does not require you to use spaghetti pasta. If you want, you can choose different types of pasta, such as curly and butterfly. You can follow the minute recommendation on the package for cooking time.
If you don't like parsley, you can substitute it with different herbs such as fresh dill, spinach and mint.


Peel the roots, cut them into 3 parts and put them in a pot, add enough water to cover and cook on medium heat for about 20-30 minutes until soft. You can check if the root is fully cooked by inserting a toothpick into the center.
After the carrot is cooked, strain it and put it in a food processor. Add 2 cloves of peeled garlic, 4 tablespoons of olive oil, 2 teaspoons of salt, 1/2 teaspoon of black pepper and 1 cup of water and mix until it becomes a puree.
In a large pot, add 1 teaspoon of salt to 2 liters of water and boil.
When the water boils, add 1 package of pasta and boil for about 9-10 minutes and drain.
Finely chop half a bunch of parsley.
Add the carrot sauce to a large pot and start cooking over low heat. After cooking by stirring for 2-3 minutes, add the boiled pasta and stir to combine with the sauce.
Add chopped parsley and cottage cheese and mix.
Your spaghetti pasta is ready.
You can put it on a deep plate and serve it.
