Method of preparation:
To prepare the dough, first add powdered sugar, clarified butter, eggs and a pinch of salt to a deep bowl and mix with a mixer or a wire whisk. Add sifted flour to it and knead a dough that does not stick to your hands. Put the dough in a cellophane bag and put it in the refrigerator for 1 hour.
To prepare the filling, separate 2 egg yolks from the white.
In a bowl, add powdered sugar, vanilla or grated lemon peel and cottage cheese to the egg yolk and mix until it becomes a cream.
In another bowl, add a little salt to the egg white and beat it well with a mixer. Add the egg yolk mixture little by little to the meringue and mix carefully.
Spread the dough on the table and cut into 6 squares. Place the batter in the muffin tin. The corners of the dough should stick out. Divide the filling into each dough. Lightly cover the filling with the edges of the dough and bake in a preheated oven at 180 degrees for 30 minutes, then at 150 degrees for 10-15 minutes.
After it cools down, you can sprinkle sugar kirsha over it and serve it next to the tea.
