Carrot soup is a French classic called crecy soup. The difference compared to other soups; is to use rice instead of flour for thickening.
In order to reduce the amount of sugar in the composition and to adjust the taste of the palate a little, we have made a difference to the recipe by adding a few small spices to the original.

  • 3 medium-sized carrots
  • 1 large onion
  • 1/2 cup of rice
  • 5 large cups hot chicken broth (or hot drinking water)
  • 1 tablespoon of liquid oil
  • 1 tablespoon of butter
  • 1/3 teaspoon cardamom
  • 1/3 teaspoon of juniper seeds
  • 1 clove of garlic
  • 1/2 teaspoon black pepper
  • 1 teaspoon of salt

Method of preparation:

Chop the onions and start frying.
After 1-2 minutes, add the butter and continue to fry the carrots.
After 1 minute, add rice and chicken broth.
After adding the chicken broth, add 1 clove of chopped garlic, black pepper, cardamom and crushed juniper seeds to the soup.
When the water starts to boil, reduce the heat.
Continue to cook until the carrots are tender and the rice is cooked.
After everything is well cooked, put the soup through a blender.
At the end, you can add salt and enjoy your soup.
